According to Mericola, the process of using meat glue is a scam, as companies can sell you "prime cuts" that actually are bits and peices of other cuts that would normally have been discarded. They also reference a report that studied meat glue, and came to the conclusion that "the bacterial contamination of meat glued steak is hundreds of times higher than a solid piece of steak." That's just wrong. We all should make sure that everyone is aware of this practice, and then we can start making strides towards changing it.
