The Secret Behind 'Meat Glue'

Grilling up the perfect steak is one of life's greatest joys. The meat itself is simple, without a whole lot of preparation needed, which is one of the reasons it's so delicious. What happens, though, when someone creates a steak that shouldn't be? Unfortunately, a process using something called "meat glue" could be threatening the integrity of steaks everywhere, and when you find out the process you'll be disgusted.


Transglutaminase, also known as meat glue, is an enzyme found in blood that is used to form meat. There are two issues with meat glue. First of all, it's misleading towards customers. According to Mericola, the process of using meat glue is a scam, as companies can sell you "prime cuts" that actually are bits and peices of other cuts that would normally have been discarded. They also reference a report that studied meat glue, and came to the conclusion that "the bacterial contamination of meat glued steak is hundreds of times higher than a solid piece of steak." That's just wrong. We all should make sure that everyone is aware of this practice, and then we can start making strides towards changing it.
