Ice Cream Cake isn't just for children. I would have it at every birthday, but had been deterred by the price. A simple 9-inch round cake at the popular chain Baskin Robins costs $40.00. Until I saw this video, I never knew how easy it could be to make my own. It doesn't even involve any baking!
This beautiful cake designed by Jenn from Cookies Cupcakes and Cardio has all the visual appeal of a purchased ice cream cake, but is simple enough to make at home. I love the design, but am also excited to know how easy it is to stack layers of ice cream for a cake. Instead of a rainbow, I would try stacking different flavors for a more "adult" ice cream cake. The best part is that since it has a cookie base, the cake can easily be put into bowls with a cookie crumbled on top when serving. This eliminates the struggle to cut through the hard cake layer that I find in most ice cream cakes.
